newest and most treasured addition to their culinary amenities, Mr.
Gilles Galli.
Gilles
Galli entered the cuisine universe in 1986 at the very early age of 15,
mentored under the two Michelin Stars Chef, Mr. Jacques Maximin, of the
Hotel Negresco in Nice. His destiny brought him to further train under
the supervision of Mr. Jo Rostang at the restaurant La Bonne Auberge,
another champion of the dining world with two Michelin Stars.
After
receiving his CAP diploma, obtained in Cannes in 1989, he continued his
professional career within more of the Michelin Stars restaurants of
the Riviera, climbing gradually the steps to success.
In
1995, he took on the brave and honoured role of becoming a
self-employed master of his art form. For nearly ten years, he operated
his own restaurant and acquiring an excellent reputation in his region,
as well as the prestigious ranking of two forks in the Michelin Guide.
In
2004, Gilles gained the ambition to extend his experience into the
hotel trade, sold his business and became an Executive Chef in a 5-Star
hotel located in Madeira Island, Portugal called Choupana Hills Resort
and Spa. During his four years of residency, he made the restaurant
Xôpana one of the most famous on the island, organising a duo of
gastronomical weeks in collaboration with famous Michelin Stars French
Chefs, tantalising the most established aficionado’s of cuisine in the
area.
He
arrives today on Koh Samui at the Napasai for a new challenge,
determined to do his best to keep the maximum number of guests dining in
the facilities, as well as attracting customers from outside.
In
order to achieve this task, Gilles is going to offer a unique diversity
of opportunities by proposing completely different restaurants. Here’s a
taste of his plan.
Lai Thai Restaurant
The
Lai Thai Restaurant serves as the main dining facility, in a relaxing
environment with high ceilings and stone-tiled flooring. The restaurant
feature large windows from floor to ceilings, allowing for 180-degree
views across the resort and the ocean beyond. The split-level seating
provides dynamic choices of where to eat and what to view. With its new
menu, Gilles proposes a fusion between French and Thai gastronomy,
mixing flavours from his home region of la Provence, fused with those of
the southern islands of Thailand.
Beachfront Restaurant
Light
and casual poolside fare is served at the Beachfront Restaurant,
specialising in Thai and International dishes for lunch and dinner
daily. Guests can enjoy both poolside and ocean views in a casual
open-air environment. Two outside Salas are set on the beachfront side,
as well as a wonderful Thai-style wooden structures that you can also
secure for private dining experiences for up to 25 people. The
Beachfront Restaurant cuisine is based on the concept of ‘Grill’, and
offering only the freshness products, particularly singling out the
products of local fishermen, which are prepared in front of the guests.
It’s also possible, on order, to taste a bouillabaisse prepared with a
myriad of fish from the Gulf. A selection of starters and lights salads,
as well as pastas and risottos are also available.
The Lobby Bar
An
impressive selection of drinks and refreshments are offered all day,
and bar snacks are available during the evening. The Lobby Bar is a
casual and relaxing place to enjoy a cooling exotic drink.
The Pool Bar
A casual all-day menu of snacks and light meals with its tapas and sandwiches menu, open only for the lunch, are
offered at the Pool Bar. Facing the free form infinity pool, this is
the perfect place for a cocktail before enjoying a unique Thai dining
experience. The Pool Bar offers wonderful ocean views and is the
perfect place to enjoy memorable sunsets.
